Power Foods ~ Oat Cakes

Below is a recipe for a quick, delicious snack, great for mornings, providing energy throughout your day. The recipe will come first and I will ramble on after describing how and why I enjoy this food that we dubbed Oat Cakes or “Oat Cakies”.

  • Ingredients:
    2 Ripe Bananas
    2 c. Oats (dry rolled oats)
    1/4 c. Peanut Butter
    1 – 2 scoops of protein powder
    2 tsp. Honey (recently I substituted with maple syrup)IMG_20180110_154043.jpg
  • Directions:
    1. Preheat oven to 350 degrees Fahrenheit.
    2. In a medium sized mixing bowl, mash the two bananas. Add peanut butter and beat for a few minutes until smooth and you cannot see banana lumps.
    3. Add oats and protein powder and mix well. Add honey and mix.
    4. Place in oven and bake for about 8-13 minutes or until they feel firm. They are not going to brown like a cookie would.
    5. Remove from oven and let cool for a few minutes before removing from tray.

Before cycling across the country I was particular about what I would and would not eat prior to physical exertion. After a summer of eating massive meals at diners or prepared foods from gas stations, it does not seem to matter as much. That being said, having access to refrigeration, cooking equipment (i.e. a kitchen) and grocery stores, I am attempting to eat cleanly.

I found this recipe on Instagram and thought I would give it a try. I haven’t figured out the exact nutritional value, but find that it is a good breakfast, each with 4 grams of protein. One is plenty to hold off hunger for an hour or two. Two is a solid base for the morning.

You can tweak the recipe in any way you like. I have added cinnamon regularly and switched out honey for maple syrup to switch it up slightly. Next step is to add some dried fruits or nuts to the mix and see how it turns out. Give it a whirl and let me know what you think! It’s a nice change of pace from a protein bar or smoothie and certainly healthier than a bagel or breakfast sandwich.

Next healthy eating adventure is meal prep. I have cooked about six or so crock pot recipes in the past two weeks and now have a freezer stocked for another few weeks. The weekly grocery bills appear to be high ($100+), but when you realize how much it can cost to go out for a bite and beer ($48 for two burgers, two beers and fries), it is VERY reasonable and equally as delicious.
